Spicy Pumpkin Chili

This chili is perfect for the Pumpkin season and if you add Camp Scoville to your chili you will have the spiciest chili of your life.

Chop

  • 2 pasilla peppers
  • 2 red bell peppers
  • 2 red onions
  • Minced garlic
  • 2 lbs of ground beef

The Seasoning

  • 8 tsp. chili powder
  • 8 tsp. of Camp Scoville Boy Scout
    or Ghost Stories Spicy Seasoning
  • 2 tsp. Cumin
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 tsp. Coriander
  • 1tsp Oregano

Open and Dump in

  • 1 giant can of pumpkin puree
  • 1 cup tomato sauce
  • 6 tbsp. tomato paste
  • 2, 15 oz. Fire Roasted Diced
    Tomatoes
  • 10 cups of chicken broth
  • 2, 15 oz. cans of Great Northern
    Beans
  • 30 oz. can of black beans
  • 15 oz can of dark red kidney beans

Directions

  • In stock pot add olive oil,
    peppers, onion
  • When tender, add garlic (2 min)
  • Add ground beef (with bowl of all
    seasonings)
  • Cook meat
  • Add pumpkin, tomato sauce, tomato
    paste, and diced tomatos
  • Stir to prevent burning
  • Add chicken stock, drain and add
    beans
  • Bring to a simmer, cook for 45 min
